Dewa Sansan polished to 50% is fermented to the absolute limit (kyokugen hakko), driving the sake meter value to an extreme +10 while producing a fresh aroma of pink grapefruit and pineapple. Despite the intense dryness, firm rice umami from the Yamagata-grown Dewa Sansan provides backbone and the finish remains mild rather than harsh.
