From a brewery founded in 1724 in Tsuruoka, Yamagata, and revived in 2012 with support from Tatenokawa, this daiginjo is produced by a young team known for pushing extreme polishing ratios. The hallmark style balances delicate sweetness with a finish that dissolves like fresh snow, with pleasant fruit-forward aroma that is elegant rather than heavy.
