This 'irregular sake rice' special edition from Yamagata's Oujiman brewery uses rice grains that fall outside standard size specifications, reflecting a philosophy of minimizing waste. Oujiman, revived in 2012 by a team of young brewers with support from Tatenokawa Brewery, pursues extreme polishing ratios and precise craftsmanship.
