Description

Honjozo named for the heavy snowfall that defines Fukui's Ono City winters, made from Gohyakumangoku at 65% polishing with Kyokai No. 7 yeast. The brewing concept draws on the slow, cold fermentation conditions of the Hokuriku snowy season, producing a careful, layered sake suited to warming through colder months.
