Nambutoujikan Kanjikomi Fukushogun is a cold-season brew (kanjikomi) overseen by a certified Nanbu master toji, a brewing tradition from Iwate that emphasizes careful low-temperature fermentation. Produced in Mito, Ibaraki, it combines the cold-water brewing heritage of Nanbu toji with the brewery's house yeast.

In order to make delicious sake, good rice, good water, and even better yeast are essential. The Mei -Ogawa yeast and the M 310 yeast, which are held by Meitsu sake, have a very good nature that they create refreshing ginjo scent and rarely make acids.
