The Miyuki Sake Namajikata label indicates this is an unheated, fresh expression meant to capture the vivid, raw character of newly fermented sake. Hiroshima is renowned for its soft water brewing tradition, which lends a gentle, rounded texture even to lively new-press styles.

For a long time, I have been making sacred sake as a brewing area of Itsukushima Shrine in Miyajima, one of the three scenic spots in Japan.
"Sake hate to leave the land" (Kenichi Yoshida) is considered to be the original way of sake, and in the culture of Hiroshima.
We aim to make rooted sake brewing.
