Brewed by an Awaji Island producer using Gohyakumangoku and Nippon Bare rice at 70% polish, with yamahai fermentation as one of the brewery's signature techniques. The resulting sake emphasizes depth of umami while retaining the clean, balanced structure the brewery is known for.
