Description

Junmai ginjo using both Yamada Nishiki and Miyama Nishiki polished to 40%, produced at Yamasan Shuzo in Ueda, Nagano, a brewery founded in 1867 that resumed production in 2023 after a period of dormancy. The cellar uses subterranean water filtered through Mt. Dokko's snowmelt and bottles entirely as genshu without dilution.
