Description
Bottled as a muroka genshu, meaning unfiltered and undiluted, this yamahai tokubetsu junmai is made from Gohyakumangoku rice polished to sixty percent in Fukui prefecture. The nose carries an earthy mix of mushroom, honey, and banana, while the palate brings tart yogurt and steamed rice through to a robust finish. Production stays small batch, favoring traditional hand methods over heavy machine use.
