Gohyakumangoku rice from Echizen Ono is slowly fermented at low temperature in this sweet, effervescent-style junmai ginjo from Fukui. Described as evoking the sound of raindrops, it presents a delicate citrus acidity and refined sweetness, and has earned gold prizes at the Wine Glass Delicious Sake Award, London Sake Challenge, and Sake China competitions.
