Brewed using the yamahai method, this junmai daiginjo delivers earthy notes of dried mushroom umami, sweet fennel, cardamom, and tamarind. Serving it warm brings out richer, rounder textures and deeper licorice notes, while chilling sharpens its acidity. The seasonal release rewards experimenting with temperature.
