Junmai Ginjo at 60% polish using specially cultivated Yamada Nishiki, brewed at Yukitsubaki Shuzo in Kamo, Niigata. The all-junmai brewery employs low-temperature fermentation to develop fine, vibrant rice umami and a fragrant nose consistent with its tanrei umakuchi house style.
