Kirei Junmai Daiginjo Kikkou from Kireishuzo in Hiroshima Prefecture is brewed with rice polished beyond 50 percent, qualifying it for the pure-rice daiginjo classification that demands both extreme polishing and the absence of any added alcohol. Hiroshima has long been celebrated for its soft water, which produces sake with a gentle, round mouthfeel that contrasts with the harder-water styles of Nada. The Kikkou name, meaning tortoiseshell, evokes longevity and good fortune, framing this premium expression as one of the brewery's most refined and auspicious offerings.
