Description

Made with Hattan Nishiki rice polished to only ninety two percent, this Junmai keeps far more of the grain than most sake, retaining its natural fats and proteins. Raw, unpasteurized, and undiluted as a muroka nama genshu, it delivers a profoundly savory and complex character. The result is a bold, rice forward sake unlike the delicate, floral style typical of highly polished sake.
