Brewed with an unusually high 89 percent koji ratio through a five stage moromi process, this bold junmai delivers deep acidity and vitality. Expect notes reminiscent of soft earthy cheese, jasmine blossom, and rum raisin ice cream. Left unfiltered and undiluted as muroka nama genshu, it reaches a striking ABV of 17 percent with an SMV of negative 18 and acidity of 3.3.
