A junmai ginjo using Tokyo-grown Kinuhikari rice and the rare Edo yeast, making it an entirely Tokyo-origin sake. The style shows white-wine-like acidity, mild sweetness, and a clean finish, and earned a platinum award at the Kura Master 2020 competition in Paris.
