Description
Gold-label Koji-zen is produced using Miyama Nishiki and Mitsu Hikari rice milled to 65 percent at the Sawara brewery. Named with reference to the quality of koji cultivation at the heart of the brewing process, it reflects the house style of clean, accessible sake from this historic Chiba producer.

It is said that the first generation of our family moved to the land of Sahara from Yamato (Nara Prefecture) during the Tenwa period (1681-1683). The fifth generation started sake brewing, and the era was the Tenpo 13 (1842). Since then, with the history of Sahara for over 300 years, we have protected traditional manufacturing methods, and brewing sake and mirin as a family business.
