Description
Kimoto fermentation and genshu (undiluted) bottling combine in this junmai from a brewery where traditional lactic-acid cultivation has been practiced for generations in Yamagata's Shonai district. Bottling without dilution preserves the full intensity of the kimoto ferment, resulting in a sake that rewards both chilled and warmed serving.
