Description
Brewed using the yamahai method with naturally occurring lactic bacteria and house yeast, this junmai ginjo is medium bodied and leans toward dry without quite getting there. Mature notes of candied apricot, banana pudding, savory herbs and butter fried mushroom come through, especially when served at room temperature or warmer since cold serving mutes the flavor. Gentle aging through the yamahai process gives it added depth.
