Aged for two years, this rich yamahai junmai shares characteristics with single malt whisky or sherry, showing notes of caramel, vanilla, and roasted nuts. Its dark, moody character stands apart from most sake made with Yamada Nishiki rice, favoring a bolder profile suited to roasted duck, charcuterie, or smoked meats. Polished to 70 percent in Hyogo, it reaches an ABV of 17.5 percent with an SMV of 0 and acidity of 1.7.
