Katsuya is a junmai from Funaki Shuzo in Fukui, crafted from a blend of Gohyakumangoku and Shinriki rice polished to 63%, brewed with underground water from the Kuzu River valley. The Shinriki rice contributes deep, round umami and a full body to this food-forward everyday junmai.
