Yamada Nishiki provides the rice foundation for this ginjo from Kamogawa Shuzo, brewed with soft Asahi mountain range subterranean water in Shirataka, Yamagata. The brewery, founded in 1741 and a multi-award winner at national competitions, applies careful temperature-controlled fermentation to produce its characteristic clean, fragrant ginjo style.
