Yumesansui rice, the flagship Aichi sake rice cultivar prized for producing clean, fruity sake without rough edges, is milled to 58% for this junmai ginjo. Brewed with soft well water from within the Kamisugi Shuzo compound, it shows white peach and melon tones on the nose with a smooth, lightly sweet entry.
