Kaizi Honjozo is produced by Hayashi Shuzo in Gifu prefecture, a region known for pristine mountain water and rice from the UNESCO-recognized Nagara River agricultural heritage area. As a honjozo, a small amount of distilled alcohol is added to enhance the aroma and create a lighter, crisper finish suited to everyday drinking.
