Description
A yamahai-method junmai produced as a nama (unpasteurized) genshu at Suzuki Shuzoten Nagaigura in Nagai, Yamagata, polished to 65%. The yamahai starter builds natural lactic complexity and body, while skipping pasteurization and dilution preserves the raw, full-proof intensity directly from the press. The brewery uses small fermentation batches and individual bottle storage across its lineup.
