Description
Hyakujuro Aozura is a junmai ginjo produced by Hayashi Honten in Kakamigahara, Gifu Prefecture, brewed with locally grown Hatsushimo rice polished to 60%. The brewery uses ultra-soft water drawn from underground flows of the Nagara River basin and locally developed Gifu G yeast, producing a fresh, tree-like aroma with balanced acidity in a dry style.
