Horaitsuru Junmai Daiginjo So Hamoni (Harmony) is brewed by Harahonten Co., Ltd. in Hiroshima City using Omachi rice polished to 50% and Hiroshima ginjo yeast. The brewery, founded around 1805 and operated year-round in a temperature-controlled underground facility, draws on soft water from the Hijiyama foothills to produce a sake with elegant aroma and a harmonious balance of gentle sweetness and clean acidity. The brewer-owner serves as the sole toji, applying meticulous craft to every batch.
