Hokuandaikoku Kurazukuri Doburoku Nigorizake is a coarsely filtered cloudy sake from Kitaanjo Honke in Omachi, Nagano, made with locally grown Hitogokochi rice at a 70% polishing ratio using Kyokai No. 7 yeast. The sake has a sake meter value of -25, indicating notable sweetness, with alcohol content between 12 and 13%. Produced in limited quantities as a seasonal release, this brewery-style doburoku retains the thick, rice-forward texture characteristic of minimally processed nigorizake.
