Kodaimaijikomi Hakubashiun is a sake from Nagano brewed with ancient-grain heirloom rice varieties, a specialty style that incorporates traditional Japanese rice cultivars not commonly used in modern production. Ancient rice varieties, including black, red, and other heirloom types, impart distinctive color, earthy character, and a notably rich, slightly sweet profile that differs markedly from standard sake. This heritage-style brew draws on Nagano's clean alpine water and the rice-growing tradition of the Hakuba mountain area, producing a visually and aromatically distinctive expression.
