Description

Hokuandaikoku Junmainamazake is a raw, unpasteurized junmai sake from Kitaanjo Honke in Otari, Nagano, bottled directly from the fermentation tank without any heat treatment. Namazake retains active enzymes and natural freshness from fermentation, producing a vibrant, lively texture and often a slightly yeasty, green-fruity character not found in pasteurized sake. Strict cold storage is required to maintain quality, and this style is closely associated with the new-sake season in winter and early spring in alpine brewing regions like Otari.
