Hokuandaikoku Junmai Ginjo Genshu Hiyaoroshi is a seasonal autumn release from Kitaanjo Honke in Omachi, Nagano, brewed during the coldest winter months and then matured through summer before being shipped as an undiluted genshu without additional pasteurization. This aging process mellows the freshness of new sake into a rounder, more layered profile with balanced acidity and depth. The result is a limited-production expression that embodies the gentle transformation from winter brew to autumn release.
