Description

Hokuandaikoku Junmai Ginjo Otarinishiki is a junmai ginjo from Kitaanjo Honke in Otari, Nagano, brewed with Otarinishiki, a sake rice variety cultivated in Otari Village and adapted to the high-altitude, cold alpine growing conditions of the northern Japan Alps. Junmai ginjo polishes rice to at least 60% without added alcohol, allowing the Otarinishiki grain's distinctive character to shape a clean, moderately fruity profile. This expression highlights the hyper-local terroir of using rice grown in the same mountain village that also supplies the brewery's snowmelt brewing water.
