Hokuandaikoku Junmai Ginjo Genshu is a junmai ginjo from Kitaanjo Honke in Otari, Nagano, bottled without water dilution as genshu to preserve the full intensity of its ginjo-grade fermentation. Junmai ginjo requires rice polished to at least 60% and no added alcohol, and the genshu format amplifies the fruity, floral aromas generated during extended low-temperature fermentation. Otari Village's position among the northern Japan Alps provides cold, pure snowmelt water that sustains the careful fermentation conditions ginjo production demands.
