Kimoto fermentation, in which natural lactic acid bacteria are cultivated without adding commercial lactic acid, drives the character of this Haruurara junmai from a brewery with a long kimoto tradition in Shonai. The method builds deep, complex umami that expresses cleanly at both cool and warm temperatures.
