Hanazakari Karakuchi Junmai Akiagari is a dry autumnal junmai released as an 'akiagari' (autumn-ready sake), the seasonal designation for a once-pasteurized sake that has matured in the cellar over summer and emerges with the balanced integration that cold-stored aging imparts. Hanamori Shuzo's Yaotsu, Gifu, brewery draws on water from the middle Kiso River basin to produce this clean, dry style. The dry profile aligns with the cooling temperatures and richer flavors of autumn cuisine.

Yachomatsu -cho, Gifu Prefecture, located in the middle basin of the Kiso River, is the final point where the river ship can go back, and has prospered as a Minatomachi where various supplies come from the Edo period to the Taisho era. At present, rivers are no longer used as transportation, but the beautiful landscape of the mountain purple water is designated as Hida Kisogawa Kokuni Park, and tourists from various areas are collected. Such historical backgrounds and high -quality underlying water in Yaotsu -cho have created various specialty products. Various brewing businesses, including sake, were one of them, and our brewery was founded in 1886 (Meiji 19) in the middle of the Meiji era, when Yaotsu -cho played an important role in distribution of supplies.
