Hanazakari brewery was founded in 1886 on the banks of the Kiso River in Yaotsu Town, Gifu Prefecture, and remains one of the few breweries in Japan still using a manually operated pressing machine. The fifth-generation president continues a tradition of hand-crafted production in small quantities, with the flagship Junmai Daiginjo Shizuku produced by the slow-drip shizukutori extraction method.
