Junmai brewed from Homare Fuji, a Shizuoka-origin sake rice, polished to 60% using Shizuoka yeast (NEW-5) and locally drawn soft water at this Numazu kura founded in 1804. The 100% Shizuoka-grown rice and local yeast express a characteristic regional identity with a mild, blossoming rice umami and gentle sweetness that is clean and persistent on the palate. Suits warm serving temperatures as well as chilled.
