Hakuinmasamune Aikokujunmaisyukimotodukuri is a junmai brewed via the traditional kimoto method using the ancient Aikoku rice variety, polished to 70%, by Takashima Brewing in Shizuoka. Kimoto fermentation builds a robust, naturally complex sake; the rare Aikoku rice produces a full-bodied, rustic character rooted in Shizuoka's 200-year brewing tradition.
