This ginjo from Hamanatsu Shuzo in Aomori is stored as namachozo (aged raw, then pasteurized only once before bottling), giving it a fresher character than fully pasteurized ginjo. Brewed with Ginsen (silver selection) rice, it combines the freshness of nama aging with elegant floral notes developed through low-temperature ginjo fermentation.
