Description

Gunmaizumi Junmai from Shimaoka Shuzo in Ota, Gunma, brewed by the yamahai method with Gunma-grown rice and spring water from the Akagi fan edge. The brewery, established in 1863, tanks-ages nearly all of its sake for one to two years before release, lending this junmai a settled, mature character that favors food pairing over aromatic freshness.

Izui is a hard water that contains a lot of micerals, and it has been through it for many years, thinking that it takes advantage of its characteristics as a mountain abolition.
