This 1982 honjozo, made from Nippon Bare rice polished to 70%, is aged at room temperature across seasons in the Gifu earthen-walled storehouse. Extended maturation integrates the added distilled alcohol into the rice-forward base, producing a deeply mellow profile suited to pairing with meat dishes, Chinese cuisine, and aged cheeses.
