Description

Daina Miyamanishiki Kimotojunmai is brewed using the traditional kimoto method, in which lactic acid is developed naturally through labor-intensive paddle stirring rather than added directly. Miyamanishiki rice, a cold-climate variety developed in Nagano, lends a firm structure and earthy depth to this full-bodied Tochigi junmai.
