Description
Hattan Nishiki and Naka Shin Senbon, both Hiroshima-origin rice varieties, are polished to 50 percent for this junmai ginjo. The two local rices contribute balanced umami with a clean, light flow, from a Kumano brewery that restarted under a new brewer trained at Hiroshima and Shiga sake houses.
