Rikyuubai Daiginjo is named after Sen no Rikyu, the legendary 16th-century tea master who perfected wabi aesthetic, and plum blossom, a fitting poetic name for Daimon Brewery's refined expression from Katano City, Osaka. Founded in 1826, this brewery applies ginjo brewing methods to every product, using tsukihaze koji and low-temperature long fermentation with soft spring water from the Ikoma mountains.
