Choryu Daiginjo Koryogura uses Omachi rice polished to an exceptional 38% at Choryu Shuzo in Nara, founded in 1963 on the banks of the Yoshino River. The brewery's Yoshino soft water, considered among Nara's finest brewing water, crafts a refined Omachi Daiginjo with the variety's characteristic broad minerality elevated to daiginjo clarity.
