Shikizaki Chishito (四季咲 地始凍) references the ancient Japanese calendar's term for the earth begins to freeze, a winter seasonal marker for this yamahai Junmai Ginjo Muroka Namagenshu. Choryu Shuzo uses Omachi at 55% polishing with the Yoshino River's celebrated soft water to craft this unfiltered, unpasteurized expression with the yamahai tradition's characteristic lactic richness.
