Azumarikishi Daiginjo Kaori is a Yamada Nishiki daiginjo polished to 40% from Shimazaki Shuzo in Nasu Karasuyama, Tochigi. Named for fragrance, it presents elegant fruit aromas and a refined, smooth flavor drawing on Nasu highland spring water and the brewery's heritage since 1849 of expressive, umami-forward sake.

We use the underground water of the clear stream Naka River that springs out of Nasudake and make sake that can be used every day to make good sake in a natural environment blessed with high quality raw rice. In addition, we continue to secure a cave as a storage room and try to create a new taste of sake.
