Azumarikishi Daiginjo Hizo Gonen is a five-year cave-aged daiginjo from Shimazaki Shuzo in Nasu Karasuyama, Tochigi, brewed with Yamada Nishiki polished to 40%. The sake is stored in a wartime underground factory converted into a 600-meter cave at a constant 10 degrees Celsius, where it develops a honey-like sweetness, gentle spice, and a smooth, enveloping body that distinguishes it from fresh-style daiginjo.
Highly aromatic and elegant, with added alcohol to enhance floral notes.
