From the Reizan range at Yamamura Shuzo in Takamori, Kumamoto, this sake is produced with spring water from the Aso outer caldera at 550 meters elevation. The cellar, founded in 1762, has always prioritized clean, food-friendly character over intensity, favoring a bright, crisp style suited to extended sipping.
