Daiginjo made from Yamada Nishiki at a brewery founded in 1620 in Ono City, Fukui, where the certified water source Oshouzu from the Hakusan mountain system is used as brewing water. The brewery has worked exclusively with Yamada Nishiki for over 30 years, producing a fragrant, well-rounded daiginjo with clean acidity.
